I understand we can't currently listen to music while recording our voice. However, I'd like a way to switch between voice and camera, and just camera so I can use my 20S for music. What is the easiest way to do this?

  If you only want to record video and not your voice then you can switch off the Bluetooth functionality in the Device Settings menu.
