If I use the 4-pole cable to connect my iPhone with the SM10 and then connect the SM10 to the SMH10 via Bluetooth will I be able to control the iPhone functions (receive calls and listen and control the iPod function) with the SMH10?

Why even use a SM 10 in this case? Connect the iPhone directly to the SMH10 via bluetooth and you will have full functionality, phone, and music control.
I want to add a radar detector to the mix.
In that case you need an SR 10 not an SM 10. Radar detector plugs into one of the 3.5mm aux jacks and is paired through the SMH10 through multipoint pairing. Radar detector signal will override music playing but will not interrupt a phone conversation - that has a higher priority. During an intercom conversation you will hear it along with the intercom. I suggest pulling up the manuals online for both the SMH 10 and SR 10 they have diagrams for connecting different ways depending on what you want to do.

Perhaps you could share what you wanted to do differently? The answer to your original question is no - you will lose the ability to control your iphone through your headset if you just plug it into an SM10. You would only be able to control the functions of your iPhone through it's keypad. The SM 10 is a one way only stereo bluetooth connection to your SMH10. It treats the iPhone like any audio device fed into it - the functionality is retained by the device. In addition, you will not be able to make phone calls hooked up to the SMH10 unless you pair your phone to the SMH10 using HFP only.
