Why do I have to choose between MP3 or phone on my smart phone?
I'd like both functionalities. If I want both, now I have to buy a separate music player.

Are you choosing hands free profile? My Captivate, and SkyRocket both do the phone and mp3 just fine. Sounds like you may be getting "headset" profile. What kind of phone?
